In the central mountain range of Colombia, in the Cauca region, we arrive to the municipality of Paez traversed by a river with the same name. In its rural area we meet with Otilia Anturi and her husband Jose Olmedo Sanchez at their farm, San Martin. They both come from families of traditional coffee farmers so have always known the ins and outs of this crop. It has been now 18 years since they’ve been producing coffee, commodity, but it was six years ago when they decided to make the switch to specialty. This decision was driven by Otilia’s husband as he is a certified technician in specialty coffee production from a government education centre and has always talked with Otilia about specialty coffee and the potential of producing high quality coffee. Since they started the journey, it has only given them amazing results and improved their quality of life. They also decided to switch to organic production, being the only producers in the area, of which they feel proud plus the conservation of the environment. Of course, this means they must be in top of everything doing the necessary organic controls to prevent diseases and plagues, but they have been able to reap its rewards. As of now, their main challenge consists of standardising the process and solidify their high-quality coffees. As a farewell message, Otilia and Jose Olmedo, want to thank you for buying their coffee, of which they want to guarantee its good quality and healthiness.
